Why did Indy not fall to his death in that scene in LC from what I saw there was nothing holding Indy and the structure should have collapsed, killing Indy. What, did all the filmakers just fall asleep?

The "Word of God" or "The Path of God"?
The Word of God had large beams only positioned beneath the correct letter...
The Path of God was a painted rock pathway that had been designed to replicate a endless pit so when you stand by the lion you see a vast dark chasm but when you put your faith in god you can walk out an notice the perfectly painted bridge that was actually beneath you!

Sorry, the word of God. As in the stepping on the letters of God's name. How come when Indy steps on "J", he dosen't fall to his death?

It's actually a production error. I think they originally intended for tarantula spiders to come out of hole created by the "J" (there is a production still somewhere), but in post production decided that it just wasn't perilous enough... so opted for the risk of a deadly fall. Hence, it sort of defies the mechanics of reality that it just doesn't all fall away when Indy walks over it.

They could have done a better job I think.

They could of indeed done a better job. Oh well...
The change from deadly spider to deadly fall also explains why Indy sort of brushes his leg after he's pulled himself out (which would be inappropriate for the plunge he just took). Check it out next time you watch. :)

I always thought when he brushes his leg he just had gravel in his shoe.
