16mm 4:3 Aspect Ratio

Just curious if the Young Indy DVDs have been put in widescreen, or did they just leave them in the original Pan Scan format?

The original format of YIJ isn't pan and scan, it's 4:3 ratio.

Pan and scan only applies to widescreen material that is alterered for 4:3.

If I recall from an article I read when the show was first released, the series was shot in 16mm film, which is 4:3.

Lucas chose the 16mm film format for a variety of reasons:

4:3 format, which was great for TV;
the colors and depths that could be produced--as opposed to the video cameras of the day;
the end product would look more like the serials of an earlier era

I have this feeling that Sharkey gets a bit... emotional if he visits a bar or house where a TV program is being displayed at the wrong aspect ratio - stretched or squashed.
