I don't go in for nostalgia and rarely novelty (even if Pale Horse's take is hilarious). For me, I would like The Beards & Ford to get back to treating the character of Indiana Jones seriously.
Towards that end, Indy has reached a point where life starts taking things away. His father, Marcus, etc. But while lecturing at Marshall College, he receives a letter from a long lost friend from his youth -- Remy Baudoin. Remy has after all these years has -- finally! -- found the Peacock's Eye, and he's included photographic evidence to persuade his skeptical friend.

Intrigued, Indy sets off to, say, Shanghai to meet his old friend. And to finally lay his eyes on this fabled treasure. Before they can meet, however, Remy is a.) gunned down in an alley; b.) poisoned publicly; c.) run off the road into the East China Sea. Lao Che has a long memory.
Paramount logo then eventually fades into
Yes, opium. Except it'll be the familiar black tar-like balls/bricks, rather than the seeds, conveniently arranged to resemble a mountain. Indy has cashed in his chips, taken a sabbatical from teaching and has been chasing the dragon ever since. A coolie finishes preparing the pipe, and passes it to a very haggard looking Indiana Jones.
I initially thought it would take an older Short Round, now an undercover CIA agent in Communist China, to break him out of that funk. But it seems too nostalgic for my tastes. There are other ways to do this though.
The one thing I did like from this idea was Marion coming to look for him, but always being two steps behind. She'd eventually fade out of the picture as the main story got rolling.
